With over 30 years of experience in the restaurant business, Chef Donald was raised in his family owned restaurant on Staten Island, New York. He has cooked in some of New York Cities finest restaurant kitchens including Le Bernardin, the Quilted Giraffe and The Sign of the Dove, shaping a valuable culinary foundation for his career. He has been the Executive Chef for Park Avalon Restaurant in New York City and the James Hotel and the Mondrian Hotel in Scottsdale, Arizona. Four years ago, a transformation really opened his eyes to the problems in our current food system and how it is harming our health and planet. So Chef Donald made it his mission to make a difference in his local community by serving fresh, healthy, plant-based foods that are delicious, fun, and easy to get.

Rawmixologist, Shane Stuart, revolutionized the green smoothie market, developing recipes for Greens & Proteins, went on to launch Grass Roots Juice Bar in downtown Las Vegas and now has raised the bar with Panacea in Boca Park, Las Vegas. With his knowledge of whole foods plant medicine and dedication to organics, Shane and Panacea serve up recipes and elixirs to heal the heart, soul and body. His much sought after school demos have turned on Clark County School district students to gardens in a glass.

Chef Emily “Delicious” Brubaker – Urban Seed

Chef Emily Brubaker grew up in La Costa, California where her love for farm fresh food began. She attended the University of California, Santa Cruz, where this love of food continued to grow where she was surrounded by the ocean and abundant agriculture. Small Farmers' markets with fresh foods dotted the California coast and she grew to know value and quality. Chef Emily learned you don't need to over complicate a dish to make if burst with flavor. If you respect and appreciate your product the dishes you create will explode with taste. After 13 years of working at the top restaurants in Las Vegas (Joel Robuchon, Sage, Fleur De Lys) she decided to follow her love for good food and join Urban Seed. There, she is able to embrace her passion for farm fresh food; non GMO, nutrient-dense healthy food, and bring it to the Las Vegas Market. Chef Emily is also a proud mother of two small, active children and is unable to travel to distant tiny farmers' markets to get fresh produce picked each morning. Urban Seed and Urban Farming will give her children , her neighborhood and the world healthy, flavorful, quality food using a limited amount of resources. Chef Emily serves as the Culinary Sales + Distribution Manager for Urban Seed Inc.

Francisco “Paco” Cortes is the executive chef of El Dorado Cantina. Since El Dorado Cantina's opening in 2014, Chef Paco has made a name for himself by combining traditional Mexican family recipes and flavors using organic and non-GMO products. A native of Mexico City, Chef Paco learned his culinary craft in the family kitchen. The recipes that his mother and grandmother passed down to him have defined his vision for traditional and sustainable Mexican cuisine. Chef Paco started his career in the Las Vegas restaurant industry in 1997. The restaurants he oversaw successfully expanded into the Bay Area. In 2013, Chef Paco returned to Las Vegas at the request of celebrity chef Bruce Kalman. In 2015, one year after the launch of the El Dorado Cantina brand, Chef Paco appeared on the popular Cooking Channel show Taco Trip with host Chef Aaron Sanchez. A popular destination for celebrities, business professionals, and public figures, El Dorado Cantina will expand to a second location in 2017 The new location, called El Dorado Express, will serve fast and sustainably-minded Mexican street food on the Las Vegas Strip.

Writing and performing music from his heart while still reaching for the stars with his acoustic guitar, Peter is the lead guitarist and vocals for Scotty and the Silver Dollar Prophets.
